Ingredients

8–10 rice paper wrappers

1 cup cooked rice noodles

Fresh mint or coriander

½ cucumber, cut into sticks (optional)

1 avocado, sliced (optional)

Juice of ½ lime (optional, for extra brightness)
Directions
1. Cook rice noodles according to pack directions. Slice the cucumber into thin sticks and slice avocado.
2. Open and mix the Thai Mango Chilli Chopped Kit and set aside.
3. Fill a shallow bowl with warm water.
Dip one rice paper wrapper in the water for a few seconds until just softened. Lay it flat on a clean board.
4. Lay a handful of the chopped kit mix towards one end with your toppings of Avocados and cucumber.
5. Fold the bottom edge over the filling, tuck in the sides, and roll tightly (just like a burrito).
6. Repeat until you have a colourful row of summer rolls ready to serve.
